There is no way to change the keyboard input language on the iPhone while mirroring phone to macbook. Changing the keyboard language on the mac has no effect, and there is no way to change it on the iPhone itself during mirroring.

Between something like English and Russian or Arabic or Chinese, you may be able to switch by toggling caps lock, if you have that chosen in keyboard settings.
If you are switching between Latin and non-Latin, caps lock might also work
Good question. I always use ctrl-space, because I often use a non-Apple usb keyboard. It seems that globe key always seems to work while the ctrl-space does not.
