I self-publish on Kindle Direct. I have a few books now but have never been able to have a different header on facing pages as many books do. I want the left side page to have my name and the right side have the title of the book. It think it is possible but the I was at Apple Support for over an hour and no one could help me. It seems like it should be simple. But it was not. Anyone have ideas please share.

So to confirm, you’ve updated both macOS and Pages to current, and have followed the directions provided in your discussions with Apple Support, including with Use different headers and footers for left- and right-facing pages selected, and the results have not met your needs:
If that’s not working, there are alternative apps. Microsoft Office was mentioned. I usually use Literature & Latte’s Scrivener for these writing tasks, as that app is focused on writing and related.
You can achieve this with Microsoft Word which features different odd and even pages. And with the free LibreOffice Writer (Word clone) with these instructions. Or even Affinity Publisher (as PDF imported to KDP) or Adobe InDesign.
Apple's Pages, however, was not designed to be this sophisticated and cannot accomplish your second sentence goals.
