New Mac Mini, what do I need to connect dual monitors and dual printers. A hub perhaps? What would you all recommend?

For USB-A cabled devices...?
You will need USB-C to USB-A adapters or a USB-C to USB-A hub.
Wireless AirPrint printers the best option, because most manufactures no longer support USB print drives.
