I would like to turn this off with a payload (restriction), unfortunately I can't find it. Even with iMazing Profile Editor not. Did someone else already find a solution maybe? I was able to turn off Siri & the AI functions, but the setting I can't restrict.

I have created a profile restriction (payload) with the tool iMazing. This profile I deploy on all of the MacBooks I have distributed at the Firm. With that I was able to turn off the ChatGPT function on the Mac and more. Just that toggle is not available to restrict. This is how it looks like... greyed out the restricted settings.

Turn off what you don't want to run on your iPhone
