I had my iPad stolen recently and I need to show proof of ownership. Once it was stolen, I erased it from my account. Now I don’t have any access to it. For insurance purposes. I need to show proof that I once owned it. Is it possible to do that?

Where did you buy it from, and how did you pay for it? If it was on a credit or debit card, you might be able to look at old statements online from when you bought it.
Only the store from which the iPad was purchased originally, whoever that was, could provide a purchase receipt. Contact them and ask, though after five years it's unlikely that any store will be able to provide one. But you can try.

It was a gift from over 5 years ago. I’m unable to go through my card company. I just need to show proof of ownership. I was hoping that there was a way to do it through Apple.
