Trying to connect new Mac mini to old monitor screen using cable DVI on monitor to HDMI on computer. Monitor screen is showing only 'DVI' and 'Analog' only. What else can I do?

the monitor will only ever show the input types it physical have, if you use a hdmi to dvi adaptor (I use several of those myself) then the monitor would show dvi when displaying what the mac mini is outputting
The screen showing "DVI and Analog" means that it is not getting a signal from the Mac mini.
Try testing a different HDMI to DVI adapter.
Or... try using a USB-C to DVI adapter or adapter cable.
DVI can allow for the transmission of either analog or digital signals.
If I'm not mistaken, the analog ones are compatible with analog VGA, while it is easy to convert between the digital ones and HDMI. I would expect a generic HDMI to DVI adapter to go from HDMI to DVI-D (digital) only, unless the description of the adapter explicitly said that it did the more complicated digital-to-analog conversion.
Sounds like your monitor wants DVI-A (analog) input and is ignoring the DVI-D (digital) signal offered to it.
I think you need to look for an adapter that is explicitly advertised as going from USB-C to DVI-A, or from HDMI to DVI-A. If you can find one. That, or consider upgrading the monitor.
