Will uninstalling Apple Music make me lose my music? I installed it on a trial but want to go back to iTunes. Since installing Apple Music there is no music available in iTunes anymore.
I run Win 11 on my pc.

No. Uninstalling either Apple Music or iTunes will leave the libraries as they are ready should you reinstall. Remove any and all of Apple Music, Apple TV and Apple Devices that you have installed, then when you open iTunes you should be able to select Music from the media selection tool to see your library as it was before you installed Apple Music.
