Apple Watch cellular unsupported, but carrier already supports esim and multi-sim.

My carrier (A1 Croatia) says they don't support Apple watch. At the same time, they do support esim and also support multisim (and one of the multiple sims can be an esim, I checked).


Does this mean that I could in fact use such esim with an Apple Watch, or are there other things that the carrier still needs to support? What are they?

That's completely up to that carrier. None of us here, since none of us (at least most likely) work for A1, will know why they are not supporting the Apple Watch or what they would need to do or change to do so. But no, at this time you cannot set up an Apple Watch for use with that carrier, regardless of their support of eSIMs on phone.
