In Sequoia 15.1.1 using Finder, select an image (Turn on Show Preview). Below the image, various kinds of information about the image can be selected using View | Show Preview Options. For example Dimensions, Resolution, Color space. These will be listed but no values, only "--". If the Preview Options dialog is closed, the labels and the "--" values disappear.

Is it the Preview.app...
Finder. In the image above, the Preview Options box is blocking the Finder's view of the folders/files. The description of steps applies to files displayed in Finder. In the View tab, the Show Preview Options is only displayed if an image has been selected and displayed in the Preview window.
I have found a work around. Open the image in Preview and then close it. After opening it once, the Preview window in Finder will have access to the information and will display it properly.
