Ciao I received the Mac mini and connected to the current ultra wide monitor. I cannot get the resolution I have with my old MacBook Pro (5K 32-9).

Are you connecting the USB-C to DisplayPort cable to one on the Mac mini rear ports...?
I would test a short high speed 8K 1.4 USB-C to DisplayPort cable

or switch to HDMI and test a short high speed 8K 2.1 HDMI to HDMI cable
