I am a student, and I download my professor's notes as a PDF and save them to my desktop/ cloud. since updating my iPad, my notes regularly crash as I'm writing on them. It's gotten to the point where I use low-power mode so my stuff saves more regularly and I lose less progress.

What version of iPadOS are you using now? Mine is still on the version released three months ago, and everything seems fine. And which app are you using to take notes? It could be a compatibility issue between the app and your iPadOS, so more information might help.
Exactly same thing since like months. I don’t use it for this thankfully cause else I’d go mad.
it is impossible to annotate any sort of pdf in files app without it crashing every second and you losing your progress. Third party probably work but I have heard conflicting accounts
