No. They have no access to your information
No, texts, emails etc. are not shared. What is shared is limited and refers mostly to apps and media purchased by you. Even then you can hide some items, though if they get billed to the Organizer they will still get a notification of the billing. Again, even then you can have some control over that by ensuring you have sufficient personal balance so that the Organizer's card does not get charged.
