See apps in iTunes on PC

I am trying to view all of my apps on my iPhone 11 on my PC computer. I would like to organize them into folders.

With over a decade of apps transferred from one iPhone to the next, things are out of control on my phone. Can't delete any apps from my iPhone I cannot delete any apps from my phone. It just stores it to my library. I want to remove it from the phone in the library. How do I do that? [Re-Titled by Moderator]

That feature was removed from iTunes with version 12.7 back in 2017.
