I want to block my girlfriend and I want her to know it, but I do not want to tell her I’ve blocked her. I want her to find out will be devastating. I want the table to turn. How do I do this?

That’s unbecoming. If you block her she will never know.
Not possible. Neither person will have any indications that they are blocked. The one big clue is that they won't respond to any communication attempts.
