In Pages 14, I am at a loss as to how to change the font in my footnotes for the entire document (over a hundred footnotes). I'm guessing there's a way to "select all" footnote text to make the changes I need to make. Any ideas?

On the first page with footnotes, click between the footnotes at the bottom of the page and that will select these footnotes and those on subsequent pages. Change the font characteristics on the first page's fonts and all fonts receive that treatment.
Tested: Pages v14.1 macOS Sonoma 14.6.1.
Can someone please have a look at the screen cap above and explain to mi how/why Pages began reformatting my footnotes as you see in the second note? It mysteriously began inserting the extra number. I have been unable to undo this in subsequent footnotes in that document and maintain the style of the first note as my preferred, default footnote style. Is there even a way to set a default footnote style?

You positioned your cursor before Burton, R. and for some unknown reason, chose Bullets & Lists Numbered : Numbers. That would put the list index before your superscript footnote value. Place your cursor before the ⁱ⁶ and click Bullets & Lists to set them to None. Your footnote will then be fixed.
