try restarting your iPhone and ensuring both the app and iOS are updated to the latest version.
You can also check if Motion & Fitness tracking is enabled in Settings > Privacy > Motion & Fitness. If the issue persists, force close the app and reopen it, or try resetting your iPhone's location and privacy settings.

Did you try to force restart by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
But, as far as I know, there is always a little delay while walking and checking the counted steps.

The bottom line is that Apple has never shown much interest in steps as a fitness metric. You may want to try a third-party step-tracking app and see if that works any better for you. StepsApp is one I've used.
