Why can't I add my own Payment Method in Family Sharing on my iPhone?
Why can I not add my own payment method on my phone. I'm in a family, but i have purchase sharing turned off

makes it sound like the organizer has to disable that for the entire family, not just you. Only the organizer can have a payment method such as a card. If you do not want the organizer to have to pay for something, try adding funds to your account balance using gift cards. Those will typically (but not always) be used first.
