I’ve installed fonts from iFont, and they’re showing up in settings fine, but I don’t know how to actually use them

Look in the Table of Contents for the Format Text section and read that.
As to other apps, that will depend on the app. You'll need to read the instructions for each app.

The only way to use installed fonts is with a app which has a font menu, like Pages. Do you see your fonts there? Not all apps support this feature.
