I submitted my podcast to Apple Podcasts Connect. It came back with 2 errors. I fixed one easily because there was a spot to enter the information. The other is that I entered the website address wrong (argh), I forgot the https, and I don’t see how to fix it as there’s no “edit” option there. It won't let me publish until I fix this, but there is no place to fix it. Please help!
Apple isn't involved in this. You've created your feed in 'Podetize', where you will have entered all your data including the website URL. It's there that you need to change it. You would presumably do this in the same place that you dentered the incomplete URL in the first place. If you are still having trouble with that you will need to contact their Support.
Actually, I'm pretty sure that I entered that information on the apple podcast connect page myself. And I forgot to include the https before the web address.
My partner created the feed. I don't think that she created a link for the podcast website.
She has since shared the rss feed everywhere! If she changes it now, won't that disrupt the momentum she has already created?
Alternatively, can I delete this on apple and start over?
The incomplete URL is present in the feed. Changing this in the feed will solve the problem and won't cause any others: as when you add an episode, you change the feed and re-publish and everywhere updates. Since you are not handwriting the feed you will need to do this in Podetize.

My feed is only one line long...
You have to amend the 'link' tag in your feed and republish it. Correct the URL in the same place as you originally entered it in whatever method you are using to create your feed.
