No. It will just automatically be replaced by the Apple TV+ subscription from the Apple One bundle. She will not need to choose.

She also should not cancel her own subscription prior to you activating Apple One, as doing so, will force her to wait until the free trial is over before she can access the cancelled subscription.

Just get Apple One, and your subscriptions and hers will automatically be replaced by the ones included with Apple One.

As it said in the bit I quoted, it will all happen automatically. In fact she should not cancel any subscriptions early because doing that would entail loss of coverage and things such as playlists disappearing.
