Anyone else facing this very challenging issue ?
I read that I'm not the only one on some other forums, and it's really impacting my work (and the trust our customers can have on us, if they see us working with a DAW constantly shutting down).
Has anyone heard about a bug fix ?

This appears to fix the problem according to a reddit forum. Also in case you don't know. To get to the user library folder, hold the option key down while selecting the GO menu in the finder. The Library folder will show up.
Also make sure logic isn't running when you delete them.
The two preferences are
com.apple.logic10 , yours might say 11 instead of 10. I am waiting a little longer before moving to Logic 11

I had crashes too, resolved with deleting the 2 logic preferences in ~/Library/Preferences. I also deleted the ~/Library/Caches/Logic/Content Download.
I wiped my 2019 Intel Mac and the only thing on it was Apple OS and Logic 11. Coreaudio crashes on computer boot every time and the cmr+r bug hit me too. Lots of problems in Logic 11. This version seems like it was rushed to market? I get they doubled the workload on testing with the new M machines but the bug reports are really bad this time.
