There is no longer a Documents folder in my User folder. I can access my Documents from iCloud Drive in the Finder sidebar. But aren't they still on my Macbook Pro too? I'm nervous about only being able to see them in iCloud, what if the internet goes down?

If you sync using iCloud, and do not optimize storage, all of your files remain on your Mac. Your files synced to iCloud Drive are found in iCloud Drive in finder. Your desktop and documents folders may also be synced if you turned on desktop and documents. The documents folder is then under iCloud Drive in finder.
Thanks, but I know I can see the files in iCloud Drive in the Finder. However, does backup software backup iCloud Drive? Shouldn't my Documents also be elsewhere on my hard drive in order to be backed up, rather than just in the cloud?
If you do not optimize, the files are on your Mac and will back up to Time Machine. If you optimize, some files may be offloaded to iCloud only status but only if space is needed on your Mac.
