iMessage read receipt time stamp changed

A text message I sent on a saturday was read on a monday at 6:45 pm. On Wednesday of that week, the read timestamp for that message changed to “read 7:10”. Now today, (Thursday) it says read yesterday.

I’ve tried updating, restarting, and changing read receipt settings. still says “read yesterday”

The person I sent it to and I are both in the same time zone and only use one device. Is this a new feature, a glitch, or something else? Haven’t been able to find an answer anywhere.

Thanks!
