If I change my iCloud settings to delete messages from iCloud after 30 days, will the original message on my phone delete as well? Or will just the backed up messages in iCloud delete and the messages on my actual device will remain until I physically delete them from my device?

Is there anyway to just remove messages from icloud, so old messages don't automatically download on my other devices (i.e. Ipad or work phone), but keep them i guess "physically" on my primary personal phone?

Your messages on device and in iCloud (if you use iCloud messages) will be kept in sync. If you delete a message on any connected device it will delete on all connected devices.
Sure. Turn off messages in iCloud. Your messages will then no longer sync across devices.
