Mac Mail randomly changing parts of text to earlier version

Noticed this behaviour yesterday, makes me lose trust in a very basic function of the computer. When I write a Mail message, I sometimes try different versions of a sentence and then move on. The problem is that Mail later randomly changes parts of the text to earlier versions. This can happen one or more lines above my cursor, so it took me a while to realise it's even happening. So far I only found a Reddit post with people talking about this issue. Anyone else came across it? Apple, any ideas how to fix it?

I've been seeing the same behavior on my Mac mail and Apple Mail of iOS. Mac OS 14.3. Mail v 16.0. iOS v 17.3 .. this is frustrating and makes email impossible because I don't always catch it when mail changes my text.
