Transfer iPhone 11 data to new iPhone 15 WITHOUT using Quick Start?

How can I get ALL my data from an old iPhone 11 Pro Max into my new iPhone 15 Pro Max WITHOUT using Quick Start? I've spent 3 days on chats with Verizon in attempts to activate the eSIM on the new iPhone 15 and I don't want to lose the eSIM activation if I reset the phone. I have TWO backups on iCloud, backups for the old phone and the new phone. I don't care about saving the new iPhone 15 iCloud backup at this point. All I want to do is to transfer ALL my old iPhone 11 files to the new iPhone 15! Can't this be done somehow WITHOUT resetting the iPhone 15 and going through the whole process using Quick Start? I do NOT want to lose the last three days of effort with Verizon trying to get the eSIM activated on my new phone. What should be done from this point? THANK YOU for any help!!!

Okay, thank you for the info! I evidently cannot use a "iPhone 11 backup" to transfer iPhone 11 data to a new iPhone 15. My new iPhone 15 will ONLY use the iPhone15 backup, it won't access or sync to the iPhone 11 backup. I don't know why Apple won't allow users to merge all iCloud backups into a single backup that can then be transferred to any iPhone you want. I suppose a total reset of the iPhone 15 and then using Quick Start is my only option. Correct? Thanks again!
