Depends on the computer... If a Mac then yes if you select Trust Device and enter your passcode. If on a Windows machine depends if they have iTunes installed... I never tried on a Windows machine so not sure but on a Mac then yes you risk that person accessing your photos. Also depends on if your photos are on the cloud; if on the cloud then no they cannot get to them. Files they can access for local apps not your iCloud files. You also risk them doing a backup of your phone which will backup the data and they could restore it on another iPhone (although I never tried this so not sure).
