how do i delete a workout category on apple watch

I just tested it on my recently updated (argh!) Watch and you go into the workout app, find the category you want to remove, and swipe left. I got some annoying screen next but eventually a red cross appeared, and I could remove the workouts I will never do from the list. Hope it works for you!

Excellent. I'm sure the original poster will find that helpful. Personally, I'm not likely to ever do that.

To the best of my knowledge, that's not an option. You can let Apple know it's a feature you'd like to see here:
