How to display the date of incoming emails rather than day of week on an iPad Air
My incoming emails do not display a date, just day of week. Even when I open the email it does not display a date.

No. This behaviour cannot be changed in iPad settings.
Apple does invite submission of feature requests via its Product Feedback portal. If you would like to ask for more flexibility in how the data and time of recently received email messages are displayed within that native Mail App, this would be the most appropriate channel to make your request:
