Siri not working proper since IOS17

iPhone 12. IOS17.1.1. Ever since updating to IOS 17 Siri not functioning properly.

If I ask her to read a text she only says a few words….but the visual prompt is there and she’s waiting for my reply but she hasn’t actually said what she thinks she said.

Siri will send a reply/text before I have given permission.

Twice Siri has set up the dictation to one recipient but then actually tried to send to a different recipient!!

The biggest issue being she cuts off her reading and I can’t hear the whole message nor can I verify if a text is correct before sending.

What I have tried using solutions from this forum:

-Restarting phone

-Deleting dictation history and resetting

-Disabling Siri and re-enabling - several times

ps: I’m not sure why this is saying it’s an iphone6 plus. I have an Apple iPhone 12. Up to date in software.
