In Keynote I highlight some copy, go to the list of fonts and the fonts I want don't pop up, even though I have them installed on my Mac. Just can't figure out how to get them into, and useable within, Keynote.

Check in format > font > show fonts > all fonts. You may find them there and if so, you should be able to select and use them. Normally they will eventually show up in the drop down menu later.

If you are talking about iCloud Keynote, you can't add fonts to that app.
