Notes text turns invisible while typing but reappears when I tap the screen?

I write stories in my notes, and am having issues with some notes. The text will turn invisible while I type, but if I tap the screen, it all reappears, including what I typed while it was invisible. I’ve tried; restarting the phone, deleting the notes app and reinstalling it, turning iCloud off and on… I don’t know what else to do. I’m up to date on my phone software updates. Starting a new paragraph temporarily fixes it then it’s back to being invisible.
