It says demo - not for resale on the back, but the phone itself looks completely new like an original, it requires me to set it up again. Includes wifi, transferring data etc. Will the phone function like normal? Also have warranty from the store and insurance.

True demo devices can not be re-sold and will not function normally.
If it's just a phone they pulled out of the box to use for a demo, then they are more than likely not an authorized retailer at all and the device most likely has no warranty, not to mention the wear on the battery that's undoubtedly been inflicted on it.
Return it and buy a new device from an authorized retailer.
Take the phone back for a refund.
A true "Demo" phone cannot be sold.
You really have no idea how old that "new" phone really is....because it is in fact a used phone likely returned by a customer.....but a hint would be 6+ months or longer given the battery condition.
Return it. They should not have sold it to you.
If you bought an iPhone 14 Pro and it is supposed to be brand-new, then it is not alright. A brand-new iPhone should always have a 100% battery health when you buy it.
activate it with a demo account then press three fingers on top left then unenroll then use it as normal
