Seems there is a bug on the Weather part on the watch - I’ve paired unpaired, reset etc etc and still no joy. On the weather app it has a + and no current location then sometimes it shows location but in an incorrect location to the phone, then the temperature comes on then disappears. Anyone else had this?

Reset your iPhone settings
Follow these steps:
1. On your iPhone, open the Settings app, then tap Privacy & Security > Location Services.

3. Under Allow Location Access, tap Never, then tap your original setting.
4. Check whether the issue is resolved.
If weather data still doesn't load, try these steps:
1. On your iPhone, open the Settings app, then tap General > Transfer or Reset iPhone.
2. Tap Reset > Reset Location & Privacy.
3. If prompted, enter your passcode and reset.
4. Check whether the issue is resolved.

Was missing info from the weather app itself but unpairing and pairing cleared it. iOS 10.1.1 Ultra 1
I had this issue and called Apple Support - they only had me UnPair and Re-Pair my watch to my iPhone. They did not have me reset any location services, etc.
watchOS 10.0.2 was released by Apple on September 26 and should address this issue.
It’s fixed now thanks to the latest update
