I used to see a “player” mode where rewind and skip forward showed under the title but now I just see Listen now, Library, and Search. When I select Listen now I can start a cast but not pause it.

Same here, backward step by Apple. The podcast can still be controlled from the watch, but after starting the podcast you need to then open the Play Now app on the watch red and white stripped Play symbol on a white background). Its more hassle than before, when the controls opened in Podcasts on the watch, so why Apple need to complicate things, I don't know, but it does work.
It might be a little easier if they allowed the Play Now as a Complication on the watch face, but no, that's too simple
