How can I re-add my email address to Mail?

Somehow I lost my email. When I tap the Mail icon a screen comes up with options for me to choose my email server. Like it shows iCloud it shows Google. it shows yahoo, it shows, Microsoft exchange, etc. etc. my email address was ******@me.com. That was not even an option. When I tap “other” it takes me to a new set up process. BUT I don’t know what to type in for answers. Can someone walk m thru step by step ? I do not know my host or my stamp, etc., or where to obtain this info. PLEASE help !
