Apple ID email defunct help

I have an iPhone 5 with an Apple ID of an old email I no longer have access to.

I want to change it to my current Apple ID. but it is impossible to do this.

I can’t remember the password, I can’t reset it and it does not appear Apple even recognises the email as valid anymore.

I tried connecting to Finder to attempt a reset of the whole phone to lose the Apple ID email but it required closing Find My so the reset can occur - but it also requires my password.

Frustrating!

Help!

Any ideas?
