I typed my document with bold headers, but somehow clicked on something that changed the whole document to Bold. How do I get the box back that controls what is in Bold?

If you have saved the Pages document previously and exited Pages, open the document again, and then on the File menu : Revert To : Browse all versions… and go back in time until you see your document before everything was bolded. Restore the good copy.
