I have text files in my Google drive that I can’t edit in iOS Files app.
i installed Office 365 (no subscription) to open and edit text files. When I used the Files app in Office all the txt files are grayed out.
How can I make Office365 open txt files?

That would be a question for Microsoft.
The Apps need to set themselves up to open a particular file type. If the Word or Power Point apps are not set to open the .txt file it won't be able to be opened by them.
