Assorting eMails in Alphabetic Order on an iPhone:
You cannot - not using Mail app. But, contact your eMail Provider, and dee if you can do so when using their site. You may be able to do so using their app. As for Apple Mail, recommend that the make it a feature. Apple may not get back to you directly, but the more feedback they receive on this, the more they will know of what is occurring, and what features to include in iOS updates to come.
