In your iPhone's Watch app, My Watch... Scroll down to Mail and under Mail Settings remove the accounts and other items you do not wish to see.

this solution doesn't work for me. I cannot remove gmail from my watch, have read and tried this and other "custom > turn off notifications" tips. I get pinged daily about logging into my email and don't want to from my watch. Can Apple post an update if something changed with the latest update? Thx
