An Apple Watch will backup automatically when it's near your iPhone. It does a full complete backup when you unpair it then pair it back.

I backed up my watched prior to pairing it with my new phone and I know get notifications pushed through to my watch but all my data is no longer there and my phone isnt currently backing up my watch.
