I used to have an android and I used to be able to record videos on my camera or Snapchat while YouTube is playing in the background (I have premium). Now when I try to do that, YouTube automatically pauses, either with Snapchat or camera. Any idea how to fix it?

It's by design. The Camera app on iOS will shutdown all other audio when recording video.
No fix, short of Apple changing the way the Camera app works.
