Getting error "unable to connect to Verizon server" when adding cellular to apple watch

When attempting to enable cellular to my Apple watch series 8, I receive the error "Connection Failed The connection to the server was lost". How do I resolve this?

Issue activating cellular on Apple Watch SE with AT Just bought a new Apple Watch SE for my kiddo who has no phone. Trying to activate cellular with AT&T and keep getting an error message EDS4100 (deleted or missing e-SIM). AT&T is “working on it” but they said this issue has been happening since early December?! Anyone have any suggestions?
