How do I edit the time asleep on Apple Watch?
how do I edit the time asleep? new apple watch thinks I was in bed at 7:30 but actually not in bed until 10:30!

Hello,
I don't believe there is a way to edit sleep data recorded by a device, only the data you manually add. You could delete the incorrect data then manually add the corrected information.
To do that you would want to use the Heath App on your iPhone > Browse > Sleep > Show All Data (This is at the very bottom. Scroll past "About Sleep" and "Sleep Apps" to find it.)
There you should see all the data by day. If the "In Bed" chunk shows multiple intervals make sure to select it so you can minimize the data you delete. Make sure to note the end time of anything you delete so you can have accurate connections between the intervals. This issue could have occurred because your iPhone was in your bed but you weren't. You may be able ti fix it simply by deleting the iPhone "In Bed" chunk if the Watch "in bed" chunk is correct or may need to correct both.
To add your correct data manually you will then need go back to the Sleep screen then select "Add data" at the top of the screen.

As a long term Apple device user I want to say welcome. I hope the switch hasn't been too difficult.
It's very understandable that issues could arise. I wasn't great about using the sleep analytics when I was attempting to set it up manually every night. Once I started an automatic sleep schedule everything started to work for me. If you set a schedule, I recommend also setting sleep focus customized screens for your iPhone and Apple Watch. That way if you stay out past bed time (lol) you won't have the Sleep Focus start without you realizing and it causing you to miss notifications or communications.
