It's kind of obnoxious, given that the whole point of accessibility is to create environments for people with different needs. I want to not get carpel tunnel in the thumb of my one fully functional hand.

According to the directions in the link I've attached below, to move the AssistiveTouch menu button, you drag the menu button to a new location on the screen.

I don't use Assistive Touch, so I don't know if everytime you turn on your iPhone with it turned on it stays where you last put it.
I'd suggest you contact Apple directly to see if its supposed to stay put. If you're in the US, you can call Apple at: 800-MY-APPLE or maybe visit your Apple Store Genius Bar.
And it snaps to the edge.
I need a way to keep it where I put it.
It does appear, based on my brief playing around with it that it is limited to the edges of the screen. I'd suggest you leave feedback for Apple:
