Perhaps you refer to the Auto Lock setting:
Settings > Display & Brightness > Auto-Lock - set as required from the list
You should note that the iPad auto-lock setting will be fixed at two minutes if you have enabled Low Power mode:
Settings > Battery > Low Power Mode
