You can use Migration assistant to transfer from your iMac if it had no more than 512GB of files. If it has more you would need to do a transfer manually or exclude some of the files when using Migration assistant during setup of your are Mini. If you want to use the external 2TB SSD as your main drive (boot) then you will need to clone your internal drive to that external. You could also move some of your large files from your iMac to the external drive like videos, photos, etc. and use that for those locations. You have several different options.
