Thanks for your very clear explanation - unfortunately it does not help me since Apple Configurator is only downloadable for MacOS 14 Sonoma, and I'm not ready for that.
A sad thing that Apple went backwards by not replacing the functionality that iTunes had in any accessible way...

Actually this can now be done using Apple Configurator 2.

Use your Mac to Arrange apps on your iPhone by simply clicking and dragging using the process given below.

Organizing Apps on an iPhone Using a Mac:
A. You can't. That is not an option. If ou think you have too many apps, then logout of each one. If that seems like a pain (which it would be, being it is likely to take you days to perform), the reset your iPhone to factory settings, as if you were to sell it. Perform as instructed here, including the iCloud logout: What to do Before you Sell, Give Away, or Trade In your Mac - Apple Support
B. Recommend this to Apple:
Do your Part: Inform Apple of this idea. You'd do so by providing Apple Feedback on this. Apple wont get back to you directly, but the more feedback thy receive from its users, the more likely they will know what their customers prefer, and what options to include in macOS versions to come.
My iPhone was immediately listed under "All Devices" as well as under "Unsupervised" and I was able to work with it using this app.
WARNING!! Do not use Configurator if you have widgets installed.
It will mess up your existing home screens and reinstall apps not listed on any home screen.
Testing this tip caused me an additional two hours of work just restoring the status quo.
Only available for 'supervised' devices...
DONT DO IT this thing just deleted everything I had. Didnt move anything I told it to move. The put every single icon back on my screens. Now I have pages of crap I dont want.
