Will Xbox One Controller (model 1537) pair to my MacBook Air M1 2020?
All the Youtube tutorials aay it hould just pop up as an option to connect in the Bluetooth section of System Preferences but nothing comes up when I try and pair it.

Can you confirm the controller it worked on was the model 1537, and not the 1708?
Apple Support said Xbox One Controller Model 1537 isn’t supported, just the Xbox One Controller Model 1708 is supported.

Try and hold the button with the X on your xbox controller for 10 seconds or so, and see if it will pop up. that worked for me when pairing it to my 2020 MacBook Pro
